Egg Substitute

To make the recipes a little less ingredient intense, I edited the vegan pumpkin pancakes and vegan corn bread recipes to include instructions to add an egg substitute rather than all the starches and guar gum and all that. That way, if you don't want to go hunt down guar gum and potato starch to make my recipes, you don't have to, you can simply use something like Ener-G Egg Replacer. However, if you are feeling ambitious and want to save a bit of money, you can use the following recipe:

Vegan Egg Substitute

Ingredients:

1 tablespoon tapioca starch
1 tablespoon potato starch
1/4 teaspoon baking powder
1/8 teaspoon guar gum
2 teaspoons cooking oil
1/4 cup soy milk

Directions:

Combine the tapioca starch, potato starch, baking power, guar gum, canola oil, and soy milk in a small bowl. Whisk until all the dry ingredients are completely dissolved.

Makes enough to substitute 2 eggs.
