Vegan Potato Salad

Summer may officially be over, but a good potato salad is always in season.

Vegan Potato Salad

4 medium russet potatoes, peeled
3/4 cups vegan mayonnaise (my favorite is Vegenaise)
1 tablespoon apple cider vinegar
1 tablespoon sugar
1-2 tablespoons (or to taste) yellow mustard
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon dill
1/4 teaspoon pepper
1 celery stalk, sliced
1/2 cup onion, minced (I prefer green onions)
paprika, to taste (optional)

Boil the peeled potatoes in salted water until a fork can go in smoothly. Cool to room temperature, then dice into cubes.

Place diced potatoes in a large bowl.

Mix mayonnaise, cider vinegar, sugar, mustard, salt, garlic powder, dill, and pepper in another bowl. Add to potatoes.

Add celery and onions and mix well.

Sprinkle paprika on top.

Serves 4.
